Grilled Molasses Salmon with Lime

Leslie's BookWe recently saw are friends, Mark (The Very Reverend Mark B. Pendleton), Leslie Glover Pendleton, and there two lovley kids, Lydia and Will on their journey across the US via train.  They stopped in Los Angeles for a few days and we were fortunate enough to be able to spend time with them.

Leslie is a very talented chef, was an editor at Gourmet magazine and has written articles for Cooking Light, Eat Well and countless others.  She is the author of three cookbooks.  One of them is called Simply Shrimp, Salmon, and (fish) Steaks by Leslie Glover Pendleton.  It is an amazing book.  This book is a “must have” is you like seafood.  There are 31 recipes for salmon alone!  The recipes are simple and very flavorful.  They can be broiled, grilled, sautéed, baked, or poached.  You can open this book and find a recipe using what you have on hand.  Last night I made Grilled Molasses Salmon with Lime.  It was superb.  I served it with Japanese rice, edamame and gyoza.

Grilled Molasses Salmon with Lime

From Simply Shrimp, Salmon, and (Fish) Steaks

Serves 4

Marinade:
3 Tbs dark molasses
1 Tbs fresh lime juice
1 Tbs vegetable oil

2 salmon steaks (about 8 oz each)
Coarse kosher or sea salt
Freshly ground black pepper
Lime wedges as an accompaniment

In a small bowl, whisk together the marinade ingredients.

Marinate salmon for 1 to 4 hours.  Discard marinade and season with salt and pepper.

Preheat a grill, or broiler with rack in top position.

Brush grill with oil and grill salmon for 6 minutes on each side or until just cooked through.  Serve with lime wedges.
