Sausages with Spinach, Cannellini Beans & Tomatoes

Sausages with Spinach, Cannellini Beans & Tomatoes is all done in one pan for easy clean up. You can choose any type of fresh sausage you like.

Ingredients

1 pound fresh sausages

1 Tablespoon olive oil

1 medium onion, thinly sliced

2 garlic cloves, minced

4 ounces baby spinach

1 cup cherry tomatoes, cut in half

16 ounce can cannellini beans, drained

¼ cup dry white wine

Directions

1Heat oil in a skillet set over medium-high heat. Add the sausages and cook until browned. Remove sausages from the skillet. Add the onion and garlic to the skillet and cook for 5 minutes, stirring occasionally.

2Stir in the spinach, tomatoes and beans. Return the sausage to the skillet. Pour in the white wine. Reduce the heat to medium-low. Cover and cook for 10 minutes, until the spinach is wilted and the sausages are cooked through.

This reminds me of the small plates that one gets in Venice in the bacari (Venetian tapas bars) to eat while you sip local wine from the Veneto. If you CAN’T make it to Venice, this is a good quick fix.
