Mexican Potatoes

These simple Mexican Potatoes are a great addition to your taco night. They are delicious and flavorful make a nice change from our usual Spanish rice.

Ingredients

2 pounds potatoes, cut into cubes

1 tablespoon olive oil

1 onion, finely chopped

1 garlic clove, finely chopped

½ teaspoon chili powder

½ teaspoon paprika

1 teaspoon cumin

½ teaspoon cayenne pepper

sour cream, to serve

Directions

1Boil the potatoes for 5 minutes. Meanwhile, heat the oil in a frying pan and gently fry the onion for 8 minutes. Add the garlic and spices, then fry for 2 minutes more.

2Drain the potatoes and tip into the onion mix. Turn up the heat and shake the potatoes around so that they are all covered. Cook for 10 minutes more until tender, then serve with soured cream, sprinkled with a little cayenne.
