Try this Green Apple Almond & Manchego Salad. It's very light, crisp and refreshing salad as a perfect accompaniment to your dinner.
1Combine both the vinegars and the shallot in a small bowl. Whisk in the oil and season with salt to taste.
1Toss all the ingredients in the vinaigrette. Divide the salad evenly among the plates.

1 Tbs white balsamic vinegar
2 tsp sherry wine vinegar
1 Tbs shallot, minced
3 Tbs extra virgin olive oil
salt and freshly ground black pepper
1 medium Granny Smith apple, cut into matchstick sized strips
2 oz Manchego Cheese, cut into strips
¼ cup salted almonds, coarsely chopped, preferably Marcona almonds, roasted
