Chicken Cacciatore in a Slow Cooker

This Chicken Cacciatore in a Slow Cooker is a wonderful meal to come home to. It takes about 10 minutes to make, so easy and so good.

  • Cook: 9 hrs
  • Yields: 4 Servings

Ingredients

3 pounds chicken breasts, cut up in pieces

1 large onion, thinly sliced

2 x 6 ounce cans tomato paste

6 ounces mushrooms, sliced

1 green bell pepper, chopped

1 large carrot, sliced

2 - 4 garlic cloves, minced

2 teaspoons oregano

1 teaspoon dried basil

1 teaspoon salt

½ cup dry white wine

3 tablespoons olive oil

1 teaspoon crushed red pepper flakes (optional)

Directions

1Place onions in bottom of crock pot. Add chicken pieces then stir all the other ingredients together.

2Cook on low heat 7 to 9 hours or high heat for about 3 to 4 hours.

3Serve over pasta or rice.

This sounds perfect to me, and I’m Italian! I’ve always made it on the stovetop & used a whole cut-up chicken, but I’m definately going to try this recipe. The ‘only’ time I ever use chicken breasts is in a crockpot recipe, since they’re otherwise pretty dry – no matter how you prepare them (except if you braise them). I’m sure that this Cacciotore will be perfecto, & the chicken breasts will come out super flavorful, tender, & juicy. Grazi
