White Bean & Broccolini Salad

This White Bean & Broccolini Salad is delicious and can be made ahead and served at room temperature. This is my kind of side dish and it's perfect to serve at your backyard BBQ.

Ingredients

Kosher salt and black pepper

1 pound broccolini, trimmed, about 3 bunches

3 tablespoon olive oil

1 teaspoon lemon zest

2 tablespoons lemon juice

2 tablespoons honey mustard

½ teaspoon red pepper flakes

2 tablespoons capers, drained and chopped

1 - 15 ounce can cannellini beans, drained

Directions

1In a large pot of salted boiling water, cook broccolini until stalks are crisp-tender, about 2 minutes. Drain and transfer to an ice bath to cool. Drain and pat dry, then cut into large pieces.

2In a large bowl, whisk together the oil, lemon zest and juice, mustard, red pepper flakes and ¼ teaspoon each of salad and pepper; stir in capers. Add broccolini and beans and toss to coat.
