Yesterday was my husband's birthday. I made him this Welsh Onion Cake, which has layers of softened onions, leeks and potatoes with some Caerphilly cheese crumbled throughout. Caerphilly is a hard, crumbly white cheese that originated in the area around the town of Caerphilly, Wales. If you can't find it, you can use a sharp cheddar instead. Welsh Onion Cake is a traditional dish to serve on St. David's Day, the patron saint of Wales, which is March 1st.

Ingredients
8 tablespoons butter, plus extra for the tin
3 large onions, thinly sliced
1 leek, thinly sliced
2½ pounds russet potatoes, peeled and thinly sliced (use a mandoline or the fine slicing blade of a food processor)
1¼ cup Caerphilly cheese, crumbled (or sharp cheddar, shredded)
Directions
1In a large pan, heat a tablepoons of the butter. Once the butter is foaming, add the onions, leek and some seasoning and cook for 15 mins until the onions are soft and sticky, stirring occasionally. Butter a 9-inch cake springform pan or baking dish.
2Melt the rest of the butter and toss with the sliced potatoes. Season with salt and pepper.
3Heat oven to 400° F.
4Arrange the potato slices over the base of the dish in a spiral or in concentric circles. Top with some of the onion mix, sprinkle over a layer of cheese and continue layering, finishing with a final round of potato slices. Press down firmly with your hands to compact the layers. Bake for 45 - 50 minutes until the potatoes are golden brown and tender; cover with foil if the cake starts to take on too much color. Turn out onto a plate to serve.
HOW TO USE UP LEFTOVERS
1Fry leftover wedges of Welsh onion cake until crispy and hot, then serve with bacon and poached eggs for a filling brunch.
