As we are approaching asparagus season, I made this Tuscan-Style Roasted Asparagus, which has pinenuts, lemon, finished off with some freshly grated parmesan cheese. Asparagus is low in calories and a great source of nutrients, including fiber, folate and vitamins A, C and K. Eating asparagus can potentially help with weight loss, improved digestion, healthy pregnancy outcomes and lower blood pressure.

Ingredients
1½ pounds fresh asparagus, trimmed
3 tablespoons pine nuts
2 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon kosher salt
½ teaspoon pepper
1 tablespoon lemon juice
⅓ cup Parmesan cheese, grated
1 teaspoon lemon zest
Directions
1Preheat oven to 400° F.
2Place the asparagus and pine nuts on a foil-lined baking sheet.
3Mix the oil, garlic, salt, and pepper; add to asparagus and toss to coat.
4Bake 15 - 20 minutes or just until asparagus is tender. Drizzle with lemon juice; sprinkle with cheese and lemon zest.
