Tomato and Date Chutney

Looking for a versatile and flavorful spread? This tomato and date chutney is the perfect blend of savory and sweet. It’s made with freshly roasted tomatoes, sweet dates, and a mix of delicious spices. Serve it with warm naan for an appetizer. Use it as an addition to grilled salmon or other meat entrees. Elevate your grilled cheese or other sandwiches with a spoonful of this delicious chutney. My husband and I were blown away at how good this is.

Ingredients

2 tablespoons Avocado oil or olive oil

1 teaspoon ground cumin

½ teaspoon red crushed pepper

1 tablespoon ginger, minced

3 cups tomatoes, peeled, seeded and chopped

½ teaspoon kosher salt

14 dates pitted and chopped

½ teaspoon honey, optional

pita bread, naan or thinly sliced baguettes, for servings

Directions

1In a medium saucepan, heat oil on medium high. Add ground cumin and crushed red pepper flakes. Sauté for a minute. Add finely chopped ginger and sauté for another minute. Add chopped tomatoes along with salt. Cook for 6 -7 minutes. When the tomato starts to turn mushy, add the dates. Cover the mixture and let it cook for another 10 minutes. Both the dates and the tomato should start coagulating into a paste. If desired, add honey to taste.

2Let chutney cool before serving. Serve with grilled or baked naan, pita bread, toasted baguette slices or add to a salmon or meat.
