My mother-in-law used to make “Those Potatoes”. I have no idea where she got the recipe from. They are very crispy and delicious. It works best if you cook them in a cast iron skillet.

Ingredients
½ pound bacon
4 tablespoon butter
4 potatoes, peeled and sliced
1 onion, sliced
2 cloves garlic, minced
½ teaspoon oregano
3 tomatoes, seeded and chopped
Directions
1Fry the bacon in a cast iron skillet, remove from pan. Add the butter to the bacon drippings, then add the potatoes, onions, garlic, and oregano. Cook until brown. Then stir in the tomatoes and chopped bacon, and serve.
