Sweet Potato Gnocchi with Chicken Sausage & Brussels Sprouts

This is an easy sheet pan dinner for a busy weeknight that uses 1 pound of Brussels sprouts, Trader Joe’s Chicken Sausage and Trader Joe’s Sweet Potato Gnocchi with Butter and Sage. It’s is so simple. You halve the Brussels sprouts and toss with olive oil, garlic powder, salt, and pepper, then put them on a baking sheet with the sliced sausages and sprouts. It only takes 10 minutes to prepare and 25 minutes to cook.

Ingredients
1 pound Brussels sprouts, trimmed and halved
1 tablespoon + 2 teaspoons olive oil, divided
12 ounce package Trader Joe’s apple chicken sausage, sliced
1 bag Trader Joe’s frozen sweet potato gnocchi
Note
Trader Joe’s frozen sweet potato gnocchi is seasoned with butter and sage – if you are using a different brand without seasonings you may want to add some dried herbs or spices when you toss the brussels sprouts with the olive oil, garlic powder and seasonings.
Directions
1Preheat the oven to 425° F.
2Line a large baking sheet with parchment paper, foil, or spray with non-stick cooking spray.
3In a mixing bowl, toss the Brussels sprouts with 1 tablespoon of the olive oil, garlic powder, salt and pepper. Arrange on one side of the baking sheet in a single layer.
4Add the chicken sausage to the baking sheet in a single layer.
5Next, empty the bag of sweet potato gnocchi in the remaining portion of the baking sheet. Drizzle the gnocchi with the remaining 2 teaspoons of olive oil.
6Bake for 22 - 24 minutes. Toss it and serve.
