Ponzu is a citrus-based sauce commonly used in Japanese cuisine. It is a tart mixture of citrus and soy sauce. This quick and easy Stir Fried Eggplant With Ponzu Sauce is a winning combination.

Directions
1Mix the ponzu sauce and sugar.
2Heat some sesame oil in a skillet, add the eggplant and stir fry until the eggplant starts to brown. Then add the ponzu sauce mixture to the eggplant and stir fry until it's completely absorbed.
