Stir-Fried Brussels Sprouts & Cabbage with Peanuts and Bacon

My daughter Zoe made this Stir-Fried Brussels Sprouts & Cabbage with Peanuts and Bacon. A friend of hers from Bon Appétit came to visit and gave her a copy of Carla Lalli Music's new cookbook called Where Cooking Begins: Uncomplicated Recipes to Make You a Great Cook. The original recipe is stir-fried celery, so Zoe changed it slightly to Brussels sprouts. My girls have learned how to adapt recipes to suit their own tastes. Can you see me beaming with pride?

Ingredients

1 pound Brussels sprouts, quartered

2 ounces thick-cut bacon, cut crosswise into ½-inch pieces

½ cup salted roasted peanuts

¼ cup green cabbage, leaves torn into 1-inch pieces

Kosher salt

1 teaspoon soy sauce

1 teaspoon unseasoned rice vinegar

chili oil, for serving

Directions

1Put the bacon in a large cold skillet, then turn on to medium heat. Cook, stirring occasionally, int the bacon renders most of its fat and starts to curl up and turn golden but not crisp, about 5 minutes Add the peanuts, increase the heat to medium-high and cook stirring frequently, until the peanuts take on some color, about 2 minutes. Then add the Brussels sprouts and cabbage, season lightly with salt, and cook, tossing just until the Brussels sprouts start to turn brown. Add the soy sauce and rice vinegar.

2Transfer to a serving platter and drizzle with chili oil.

This recipe is loosely based on a recipe in Carla Lalli Music's new cookbook called Where Cooking Begins: Uncomplicated Recipes to Make You a Great Cook, March 2019.
