Spinach & Italian Sausage Quiche

This is my aunt Marjorie’s Spinach & Italian Sausage Quiche recipe. It’s so good and easy. I used cheddar instead of Swiss cheese.

  • Prep: 10 mins
  • Cook: 40 mins
  • Yields: 4 - 6 Servings

Ingredients

1 package Stouffers Spinach Soufflé, thawed

2 eggs, slightly beaten

3 Tablespoons milk

1 teaspoon white onion, finely chopped

½ cup canned sliced mushrooms, well drained

¾ cup Italian sausage, casing removed, cooked and crumbled

¾ cup Swiss cheese, grated

9″ unbaked pie shell

Directions

1In a large bowl, combine first 7 ingredients in order given. Pour into unbaked pie shell.

2Bake at 400˚ F for 35-45 minutes (or until set).

NOTE

1The amount of onion, mushroom, sausage and/or cheese may be increased or decreased according to personal taste. Also, if you do increase the volume, you may want to use a deep-dish pie shell, in which case the cooking time will increase.

Is it okay to make without a pie shell and pour mixture straight into baking pan?

I was in my late 20s when I first got this recipe from a cousin by marriage named Terry Babbitt from S. Texas. My thanks to her after all these years I still make the recipe and I’m almost 70 years old

Have made this recipe for years, one of my favorites. I now use turkey sausage due to a health issue and it’s just as good and if I don’t have Swiss cheese, cheddar works. It’s a winner.
