Southern Style Tomato Pie

You'll love this Southern Style Tomato Pie, a perfect summer dish. It's packed with ripe tomatoes and fresh basil in a flaky crust, topped with a creamy mix of mayonnaise and cheese that bakes up golden and bubbly. It's a delicious blend of sweet tomatoes, fragrant basil, and savory cheese—great for any summer get-together.
I used Duke’s Mayonnaise. Unlike many other commercial mayonnaise brands, Duke's is naturally sugar-free, giving it a tangier, less sweet flavor profile. This was initially due to sugar rationing during WWI but became a signature characteristic. Their motto. - It's Got Twang!

Directions
1Heat oven to 375°F.
2Line a baking sheet with a few layers of paper towels. Slice the tomatoes and lay on the paper towels in a single layer, then sprinkle with the salt to draw out the tomato juices. Let sit for 10-15 minutes, then use fresh paper towels to pat-dry the tomatoes and remove move of the excess juice so the pie doesn't turn out soggy.
3Par-bake the crust for 10 minutes.
4While the crust bakes, combine the basil, green onion, and garlic in a bowl and stir. In a separate bowl, combine the mozzarella cheese, sharp cheddar cheese, mayonnaise and season with freshly ground black pepper. Stir to combine.
5When the pie crust has baked for 10 minutes, layer half of the tomatoes on the bottom of the crust, then sprinkle with half of the basil-onion mixture. Layer the remaining tomatoes on top and sprinkle with the remaining basil-onion mixture. Spread the cheese mixture over the top of the pie.
6Decrease the oven temperature to 350° F, then return the pie to the oven and bake for 30 minutes, uncovered, until the cheese begins to get lightly brown on top. Let rest for 10 minutes, then slice and serve warm.

Made the Southern Tomato Pie yesterday after we picked 6 1/2 pounds of tomatoes from our garden. There is almost nothing to do with tomatoes better than this recipe. I will make this recipe over and over again. We also made tomato jam yesterday. A first for us. Definitely a work in progress.
This tomato pie will not disappoint. I did add a little Trader Joe’s everyday seasoning which I add to almost everything.
