Ingredients
8 skinless chicken thighs
salt & pepper, to taste
1 cup uncooked rice
½ packet brown onion soup
1 cup hot water
1 cup mayonnaise
1 cup chutney
crushed red pepper flakes, to taste (optional)
1 tablespoon parsley, chopped
Directions
1Preheat the oven to 350° F.
2Season the chicken with salt and pepper.
3Add the rice in a greased oven dish and place the chicken pieces on top of the rice.
4Mix the hot water and onion soup. Add the chutney and mayo and mix. Pour over the chicken.
5Cover the dish with tin foil and place in the preheated oven for 45 minutes.
