Soda Fountain Phosphate

Phosphates were carbonated beverages made-from-scratch by the "soda jerk" using carbonated soda water, flavored syrups and phosphoric acid, an ingredient still used today in many brands of soda-pop including Coke. Popular flavors included cherry, lime (usually called a green river), chocolate and vanilla.

To make genuine phosphate sodas, you will need a bottle of acid phosphate. "Acid phosphate" is NOT the same as phosphoric acid. It's a phosphoric acid that's buffered by specific mineral salts to help it maintain the proper level of acidity.

DO NOT substitute phosphoric acid, as it can be extremely dangerous to your health!

Acid Phosphate is very hard to find now, The Prairie Moon Company carries an Acid Phosphate and over 70 flavored syrup concentrates.

Ingredients

2 ounces of syrup, your choice of flavor

10 ounces carbonated water

2 to 3 shakes of acid phosphate (½ to 1 teaspoon)

Vanilla Syrup

2 cups water

2 cups sugar

2 tablespoons pure vanilla extract

Directions

1Put all the ingredients in a glass, stir, add ice, and you have a 12 ounces old-fashioned soda fountain "phosphate". Adjust syrup and acid phosphate to suit your taste.

Vanilla Syrup

1In a medium saucepan over medium-high heat, bring water and sugar to a boil.

2Cook until mixture thickens slightly, about three minutes.

3Remove from heat, stir in vanilla and let cool to room temperature.

4Refrigerate in an airtight container for up to two weeks.

Good to know this. Where can I get acid phosphate locally in Florida…..I’ve been looking in grocery stores to no avail. Thanks
