Smashed Tiny Potatoes

Smashed Tiny Potatoes are roasted, smashed, and fried to crispy perfection!

Ingredients

1 pound whole mixed tiny new and/or fingerling potatoes

3 Tablespoons olive oil, divided

1/4 teaspoon kosher salt

1/4 teaspoon ground black pepper

Directions

1Preheat the oven to 375 degrees.

2Stir the potatoes with 1 tablespoon of olive oil. Put the on a baking sheet and roast about 20 minutes. Take them out of the oven and smash them with a glass. This can be done in advance.

3In a large, cast iron skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the potatoes and cook, without stirring, until the bottoms turn golden brown, about 5 to 8 minutes. Using a spatula, turn the potatoes over and cook, drizzling with oil, if needed, until golden brown on the other side for another 5 to 8 minutes.

4Sprinkle with salt and black pepper.
