Sicilian-Style Roasted Cauliflower with Orange, Fennel Seed, and Raisins

My husband surprised me with this beautiful orange cauliflower he found at the farmers market. Did you know that it packs a serious vitamin A punch? We're talking about 25 times more than regular white cauliflower. Vitamin A is essential for healthy vision, a strong immune system, and even helps with cell growth.
To celebrate this vibrant find, I made Sicilian-Style Roasted Cauliflower with Orange, Fennel Seed, and Raisins. The flavors are incredible – a lovely balance of tangy acidity from the orange juice, a subtle brininess, and a touch of sweetness from the raisins. It's truly a delicious and nutritious dish.

Directions
1Preheat the oven to 400° F.
2In a large mixing bowl, toss together the cauliflower, fennel seed, and olive oil, then season with salt and pepper.
3Arrange the cauliflower in a single layer on a 9 by 13-inch rimmed baking sheet
4Roast the cauliflower until it is golden brown on the edges, 35 to 40 minutes.
5Meanwhile, soak the raisins in warm water until they are soft and plump, 5 to 10 minutes. Once the raisins are softened, drain the water and set the raisins aside.
6Remove the cauliflower from the oven, allow it to cool slightly, then transfer it to a large serving bowl.
7Add the raisins, capers, orange zest, and orange juice to the bowl, and stir well.
8Season with salt and pepper and serve it either at room temperature or chilled.
9Alternatively, you could toss this mixture with whole wheat pasta for a hearty vegetarian meal.
