Sausage, Potato & Broccoli on a Sheet Pan

Sheet pan dinners are very popular and with good reason; the prep is simple, easy cleanup. One pan, one dish, dinner's done.  This Sausage, Potato & Broccoli on a Sheet Pan is a great combination and has a delicious garlic Dijon marinade.

Ingredients

1 package - 4 sausages of your choice, cut into ½-inch thick pieces

6 - 8 medium-sized red potatoes, cut into 1-inch cubes

1 head broccoli, chopped into florets

¼ cup olive oil

2 tablespoons Dijon mustard

1 tablespoon hot sauce

2 cloves garlic, minced

1 teaspoon onion powder

sea salt and black pepper, to taste

red pepper flakes, to taste

Directions

1Preheat oven to 425° F. Line a large sheet pan with foil or parchment paper. Add diced potatoes to a medium-sized bowl. Add chopped sausage and broccoli to a separate bowl.

2Whisk the remaining ingredients together. Pour half over the potatoes, and half over the sausage and broccoli. Mix well using your hands so all pieces are covered. 

3Add only the potatoes to the pan, and bake for 15 minutes. Remove the pan from the oven and add the sausage and broccoli to the potatoes. Toss everything together and then spread back out evenly. Return to the oven for an additional 15 minutes until everything is browned.
