Salmon with Rhubarb Sauce

I somehow woke up and decided I wanted to make some sort of sauce with rhubarb for salmon. It's a ridiculous idea in February when rhubarb is not exactly available, so I ended up buying some rhubarb preserves. This Salmon with Rhubarb Sauce is a revelation. The tartness of the rhubarb preserves works well to cut through the richness of the salmon.

Directions
1Preheat oven to 400° F.
2Season salmon with salt and pepper.
3Heat the olive oil in a large skillet over medium-high heat.
4Season both sides of the salmon with salt and pepper.
5Add the salmon to the pan and cook until browned on both sides and cooked through, about 3 - 4 minutes per side. Transfer the pan to the oven and roast for another 5 minutes, or until the salmon is done to your liking.
6Sauté the shallots in olive oil, then add the white wine vinegar, and white wine and cook for 1 minute, or until the liquid is absorbed, then add the rhubarb preserves. Cook for 2 minutes then add butter and stir until melted.
7Pour the rhubarb sauce on the salmon and serve.
