Salmon with Leeks and Mushrooms

I love developing recipes from ingredients I happen to have. This Salmon with Leeks and Mushrooms is what I came up with for dinner. It has a creamy lemon sauce which marries well with the leeks and mushrooms.

Ingredients

3 leeks, sliced

1 pound portobello mushrooms, sliced

2 teaspoons fresh thyme, chopped

1 tablespoon butter

1 tablespoon olive oil

salt & pepper, to taste

¼ cup dry white wine

¾ cup half-and-half

2 lemons, zested and juiced

6 (6-ounce) salmon fillets

Directions

1Heat butter and olive oil in a large sauté pan over medium heat.  Add washed and chopped leeks to the pan and cook for 10 minutes or until leeks have softened, stirring occasionally.

2Stir in fresh mushrooms, thyme, wine, salt, and pepper.  Cook for 10-15 minutes or until almost all of the liquid is gone, stirring occasionally.

3Reduce heat to low, stir in half-and-half and lemon zest, and simmer until sauce has thickened, about 10 minutes.  Stir in ¼ cup lemon juice and remove from heat.

For the salmon

1Preheat oven to 450° F.

2Pat dry salmon fillets. Season tops generously with salt and pepper.

3Roast on a sheet pan lined with parchment paper in the oven and cook for about 12 - 15 minutes. 

4Top the salmon with leeks and mushrooms.
