Salmon and Feta Pinwheels is a Mediterranean inspired entrée that makes a great presentation for a dinner party. You can make them ahead and put them in the oven for 15 minutes.

Ingredients
2 teaspoons olive oil
¼ cup onion, minced
1 clove garlic, minced
4 cups spinach, chopped
½ teaspoon salt
½ teaspoon pepper
8 ounces cream cheese
2 teaspoons lemon zest
¼ cup feta
1¼ pounds center-cut salmon fillet, skinned and cut lengthwise into 4 strips
Directions
1In a large frying pan, heat oil over medium heat. Add onions and cook until tender but not browned. Stir in garlic and chopped spinach, salt, and pepper. Cook until spinach just starts to wilt, about 3 minutes.
2Remove from heat and add the lemon zest, cream cheese, and feta. Mix well.
3Spread mixture evenly over salmon strips. Roll up gently and chill in the refrigerator for about 10 minutes.
