Salisbury Steak with Mushrooms and Madeira

I made this Salisbury Steak with Mushrooms and Madeira for a client. The term "Salisbury steak" has been in use in the United States since 1897. The dish is named after an American physician, James H. Salisbury (1823–1905). The dish is typically served with gravy and mashed potatoes or pasta. Salisbury believed that diet was the main factor governing your health, so he created a special diet for his patients suffering from anemia, colitis, gout, rheumatism, arteriosclerosis, tuberculosis, and asthma. It was one of the earliest American "fad" diets. Who knew?!

Directions
1Soak the bread in the milk and squeeze it dry, then mix it with the ground beef, salt, pepper, and 2 teaspoons of Worcestershire sauce. Form into 4 to 6 oval patties.
2Preheat the broiler, put the patties on a greased baking sheet, and broil for 4 minutes per side. Check for your preferred doneness.
Mushrooms Sauce
1Melt the butter in a skillet over medium heat, then add the mushrooms, garlic, and sauté for about 5 minutes. Then stir in the flour and cook for 1 minute. Add the Madera and then slowly add the beef broth and 1 teaspoon Worcestershire sauce. Sauté until thick.
2Serve the patties and top with the Mushroom Sauce. Garish with the cooked bacon and green onions.
