Roasted Salmon with Juniper Berries and Lemon Thyme

Juniper Berries give gin its distinctive flavor. This Roasted Salmon with Juniper Berries and Lemon Thyme is an unusual combination of flavors that work well together.

Ingredients

4 salmon filets

1 tablespoon olive oil

1 tablespoon unsalted butter

1 tablespoon juniper berries, finely chopped

2 teaspoons lemon thyme leaves

juice and finely grated zest of 1 lemon

sea salt and freshly ground black pepper

Directions

1Preheat the oven to 400° F.

2Place the filets on a baking sheet lined with parchment paper. Brush them with olive oil, dot with butter and sprinkle with salt and pepper. Sprinkle the juniper berries and the lemon thyme. Drizzle with the lemon zest and lemon juice. Cover with another piece of parchment paper. Bake it for exactly 15 - 20 minutes, depending on the thickness of the fillets and the degree of doneness you prefer.
