Roasted Purple Cauliflower with Garlic & Onions

This is such a beautiful vegetable. Roasted Purple Cauliflower with Garlic & Onions is is very low in fat, cholesterol, & a good source of protein, fiber, and a slew of vitamins & minerals. Purple cauliflower contains more anthocyanin, the same antioxidant found in red wine.

Roasted Purple Cauliflower with Garlic & Onions

Ingredients

1 head purple cauliflower, cut into florets

2-3 cloves of garlic, minced

1 small onion, thinly sliced

2 Tablespoons olive oil

kosher salt

coarse black pepper

Directions

1Preheat oven to 450 degrees F. Line baking sheet with foil or parchment paper.

2Toss cut cauliflower, garlic and onions in olive oil. Make sure to coat entire surface of vegetables. Spread cauliflower mixture in a single layer on prepared baking sheet. Do not over crowd pan, allow ample space.

3Generously season with salt and pepper.

4Bake for 15-20 minutes until edges and flat areas of cauliflower have browned. Cook time may vary depending on size of your florets.
