Roasted Olives, Almonds with Lemon & Thyme is a fantastic appetizer. Roasting the olives makes the flavors more intense.

Ingredients
2 cups mixed black and green olives with pits
1/4 cup olive oil
2 sprigs fresh thyme
1/2 cup whole almonds
1 Tablespoon lemon juice
2 Tablespoons lemon zest
Directions
1Preheat oven to 350° F.
2Toss all ingredients except the lemon zest together. Spread in a foil-covered pan and roast for 25 to 30 minutes, stirring occasionally. Remove from oven and add lemon zest. Serve warm or at room temperature.
3Transfer to a shallow bowl. Serve at room temperature with toasted baguette slices or crackers.
