Roasted Brussels Sprouts with Almonds & Blood Oranges

I went to my local farmers market. There are several food trucks that park there. I bought this amazing Brussels Sprouts and Blood Orange salad. I immediately came home and recreated it.

Ingredients

1 pound Brussels sprouts, cut into quarters

1 tablespoon olive oil

zest of half of small orange

½ cup slivered almonds

4 small blood oranges (or regular oranges)

splash champagne vinegar

Directions

1Add the orange zest and a squeeze of orange juice to the olive oil and allow to sit for 30 minutes.

2Toss the brussels sprouts in olive oil. Season with salt and roast in oven at 375 degrees on flat baking sheet or a cast iron pan for 5 minutes.

3Cut peel from 3 of the blood oranges and slice into rounds.

4Turn and add in almonds and roast for another 4 minutes to 6 minutes.

5Remove from oven and add a splash of champagne vinegar and toss with the blood oranges.

6Season with salt and pepper. Squeeze of juice over the brussels sprouts once you have tossed them in olive oil.
