Roasted Brussel Sprouts with Honey Sriracha and Bacon

These Roasted Brussel Sprouts with Honey Sriracha and Bacon make a great healthy snack! They are a perfect mix of sweet, spicy and salty. You can serve them as a snack or a side dish.

Ingredients

1 pound Brussel Sprouts, trimmed and halved or quartered if large

4 slices bacon, cooked and chopped

Kosher salt

lemon pepper, to taste

½ lemon, freshly squeezed

3 tablespoons mayonnaise

1 tablespoon plain yogurt

1 teaspoon Sriracha, or to taste

1 teaspoon honey

Directions

1Preheat oven to 400° F.

2Cut off the brown ends of the Brussels sprouts and pull off any yellow outer leaves. Mix them in a bowl with the olive oil, salt and pepper. Pour them on a sheet pan and roast for 35 to 40 minutes, until crisp on the outside and tender on the inside. Shake the pan from time to time to brown the sprouts evenly.

3Season with a few pinches of salt, lemon pepper and fresh lemon juice, to taste.

4In the meantime, mix together the mayo, yogurt, Sriracha and honey. Put in a plastic sandwich bag and cut the corner to act as a piping bag. Or use a squeeze bottle.

5Serve warm Brussel Sprouts in a casserole dish and drizzle Sriracha sauce over the top. Top with bacon.
