I decided to use up some brie I had in the fridge and this was the result - Roasted Baby Potatoes, Broccoli, Brie and Parmesan. It's a little "over the top", but so good!

Yields: 4 - 6 Servings
Ingredients
3 - 4 cups baby potatoes, cut in half
10 ounces broccoli florets
3 Tablespoons extra-virgin olive oil
sea or kosher salt and fresh black pepper
4 ounces brie, with most of rind removed and cut into chunks
⅓ cup grated Parmesan cheese
Directions
1Preheat the oven to 400° F.
2Grease a large baking sheet from edge to edge.
3In a small bowl mix the potatoes, broccoli and olive oil, salt and pepper together. Then pile the mixture onto a foil-lined baking sheet.
4Bake 20 minutes. Remove from the oven and cover with brie and parmesan cheese.
5Bake 5 minutes longer until the cheeses are melted.
