Potaffles

Since Thanksgiving is coming up, here is a solution for your leftover mashed potatoes - Potaffles. My family was fighting over the last one!

  • Prep: 15 mins
  • Cook: 30 mins
  • Yields: 8 Servings

Ingredients

4 cups cold mashed potato

¼ cup flour

3 Tbs green onions, chopped

½ cup parmesan cheese or cheddar

spray oil

1 egg, lightly beaten

Directions

1Heat waffle iron and spray with oil.

2Combine potatoes, flour, green onions, cheese and the egg and mix well.

3Spoon ¼ cup of the mixture onto the center of the waffle and cook until golden brown.
