Pork Chops with Balsamic Braised Cabbage

I love the simplicity of these Pork Chops with Balsamic Braised Cabbage. They are fast and easy and perfect for a busy weeknight meal.

Ingredients

3 Tablespoons olive oil

4 bone-in pork chops

Kosher salt

Pepper

1 onion, sliced

½ small (about 1 pound) head red cabbage, cored and thinly sliced

¼ cup balsamic vinegar

½ cup flat-leaf parsley, chopped

Directions

1Heat oven to 400 degrees F.

2Heat 1 tablespoon oil in a large skillet over medium-high heat. Season the pork with 1/2 teaspoon salt and 1/4 teaspoon pepper, and cook until browned, 2 to 3 minutes per side. Transfer to a rimmed baking sheet and roast until just cooked through, 5 to 6 minutes.

3Meanwhile, wipe out the skillet and heat the remaining 2 tablespoons oil over medium heat. Add the onion and cook, covered, stirring occasionally, for 5 minutes.

4Add the cabbage, vinegar, 2 tablespoons water, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook, covered, stirring occasionally, until the cabbage is just tender, 5 to 6 minutes. Fold in the parsley and serve with the pork chops.
