This Pistachio Crusted Salmon is delicious. The salmon gets slathered in Dijon mustard and honey (I used hot honey, of course) and then dipped in the pistachios. I just checked and found out I have 78 different salmon recipes on my blog! We try to eat salmon once a week.

Yields: 2 Servings
Ingredients
2 x 6 ounce salmon filets
salt and pepper, to taste
garlic powder
3 teaspoons dijon mustard
1 teaspoon honey
3 tablespoons shelled pistachios, roasted and salted, chopped
juice of a lemon
Directions
1Preheat oven to 375° F.
2Pat the salmon dry and add the salt, pepper and garlic powder, then spread the dijon mustard on the top of the salmon, then drizzle with honey.
3Add the crushed pistachios on top pressing into the salmon to ensure they stick.
4Bake for 15-17 minutes checking to make sure it's golden brown and not too browned.
5Top with some fresh lemon juice and serve over a salad.
