Pineapple Jalapeño Salsa

You can brighten up your summertime barbeques with this topical salsa. My husband made this Pineapple Jalapeño Salsa, which works on chicken, fish, shrimp, pork or you can use it in fish tacos, or even with black beans as a side dish. This sweet and spicy salsa also has a hint of fresh basil.

Ingredients

2 cups pineapple, finely diced, approximately one small fresh, ripe pineapple

¼ cup light brown sugar

2 tablespoons white wine vinegar

1 tablespoon fresh lime juice

I small Jalapeño, finely diced

¼ teaspoon cumin

¼ teaspoon salt

¼ teaspoon ground pepper

2-3 green onions, finely diced and separated, white and green parts

¼ cup fresh basil, finely chopped

Directions

1Put all ingredients except the green parts of the green onions and the basil into a saucepan.  Bring to a boil then simmer for 5-10 minutes.  Remove the pineapple mixture with a slotted spoon to a bowl and continue to simmer the remaining juice until reduced by half.  Add the juice to the bowl of pineapple, add the green onions and basil and adjust salt to taste.
