Pickled Red Onions

Pickled red onions are going to have permanent residency in my fridge. These vibrant onions happen to be Viva Magenta 18-1750, which is the Pantone color for 2023. If you, like me, are not a fan of the sharp and pungent taste of raw onion, this is the answer. Pickling them in white vinegar, sugar, and salt tones the harsh flavor way down. There are many uses for these onions - use them in salads, tacos, and sandwiches. They are particularly good in grilled cheese.

Ingredients

1 large red onion

2 cups white vinegar

2 cups water

⅓ cup sugar

2 tablespoons kosher salt

Directions

1Divide the onions between 2 jars.

2Heat the vinegar, water, sugar, and salt in a medium saucepan over medium heat. Stir until the sugar and salt dissolve, about 1 minute. Let cool and pour over the onions. Store the onions in the fridge.

3They will keep in the fridge for up to 2 weeks.

I wonder if you could get an equally vibrant color on your plain white onions by just macerating them in the juice from a jar of pickled beets?

I hope somebody tells those greige-soaked people at Restoration Hardware that this year’s color is magenta.

I like to keep these on hand too. If all I have is a white or brown onion, one drop of red food coloring will give you the pinkish hue.
