Peppery Bacon Wrapped Filet Mignon

This Peppery Bacon Wrapped Filet Mignon will satisfy all steak lovers! Wrapping bacon around filets mignons prevents meat from drying out while being roasted.

Directions
1Mix the olive oil, salt and black pepper around on a plate.
2Wrap each filet with a strip of bacon.
3Rub your steaks on the seasoned plate. Make sure you coat them on both sides. Let rest for 30 minutes.
4Heat a heavy skillet over medium high heat until hot, but not smoking.
5Using tongs, carefully add the steaks to the skillet and let them cook untouched for 3 or 4 minutes or until they release easily.
6Turn the steaks and immediately transfer the skillet to a preheated 425-degree oven and cook steaks an additional 10 minutes for medium rare and up to 15 for well done. Serve immediately with pan juices.
Chef's Tip
Professional chefs can tell when a steak is done by poking it with a fingertip and evaluating its firmness. If it feels soft, the meat is rare. If your touch meets with a little resistance but springs back, it is medium-rare. If it feels firm and has no spring, it is well done.
