Peanut Butter, Scallion, and Bacon Canapés

We used to be members of the California Club in downtown Los Angeles. They often served these peanut butter and bacon canapés that were our favorite. Peanut butter and bacon are a classic combination, and the scallions add a nice freshness and crunch. The combination of salty and sweet flavors is really addictive. I will admit, the recipe sounds extremely strange, and when I made these, they disappeared in less than 5 minutes! My husband insists that the Cal Club version was lots of butter, then peanut butter, then bacon on toast.

- Yields: Makes 36 canapés
Directions
1Preheat the oven to 425° F.
2In a small bowl stir together the peanut butter, the scallions, the lemon juice, the soy sauce, 1 tablespoon of the mayonnaise, and the brown sugar. Spread the bread slices lightly with the additional mayonnaise, spread the peanut butter mixture on the slices, and cut the slices into quarters. Chop the bacon into small bits, I used a mini food processor.
3Arrange the canapés on a baking sheet, put the bacon bits on top of each canapé, and bake in the middle of the oven for 8 to 10 minutes, or until the bacon is crisp.
