Peanut Butter Ramen Noodles

One of the things (which my husband Eric invented) I always made for my kids is something we call peanut butter ramen noodles. By adding peanut butter, it adds some much needed protein. I also like to add some shelled edamame for even more of a protein boost. It's really delicious!

  • Yields: 1 Serving
Peanut Butter Ramen Noodles

Ingredients

1 package ramen noodles, with seasoning packet – I use chicken

¼ cup chunky peanut butter

1 Tbs soy sauce

½ Tbs rice vinegar

½ scallion, thinly sliced (optional)

Red pepper flakes, to taste (optional)

Directions

1Boil noodles following directions on the package, add flavor pack and drain off most liquid. Toss with soy sauce, rice vinegar and peanut butter. Garnish with scallion and red pepper flakes.

I’ve been saving this post, knowing I wanted to try it. I love hot & sour soup, and Phad Thai and this looked like a quick and easy way to get the flavors of both. On Friday I came down with a bad cold, and I hadn’t had one in years. I didn’t feel like eating. Saturday afternoon, I remembered this post and looked it up. Soup just sounded perfect. What an easy recipe and so good. I threw in a handful of chopped vegetables and added an egg for protein, and it was amazing. I definitely added enough red pepper flakes to make it spicy. Great for my sinuses. Thanks for such a simple but delicious recipe. Now it’s my favorite ramen recipe, 2nd favorite is adding a can of vegetarian chili to make soup, and throwing extra chili powder in too.

I bet with a squeeze of lime it would taste like phad Thai! Going to try it this week.
