This Orange, Fennel & Red Onion Salad is a beautiful salad that is so light and refreshing. It's a popular Sicilian salad. The fennel's licorice-like flavor pairs well with the sweetness of the orange and the acidity of the red onion. It is a good salad to make ahead of time, as the flavors will only improve with time.

Ingredients
Dressing
2 tablespoons fresh orange juice
2 tablespoons Sherry vinegar or red-wine vinegar
3/4 teaspoon salt
3 tablespoons olive oil
Salad
1 medium-large red onion, very thinly sliced
1 large fennel bulb, very thinly sliced, reserve fennel fronds
3 large navel oranges
Directions
Dressing
1In a bowl, whisk together orange juice, vinegar, salt and pepper. Dressing may be made 1 day ahead and chilled, covered.
2In a bowl of ice and cold water, soak onion for 15 minutes.
3With a sharp knife, cut a slice from top and bottom of each orange to expose flesh and arrange cut side down on a cutting board. cutting from top to bottom, remove peel and pith. Cut oranges crosswise into 1/4-inch-thick slices.
4Drain onion well and pat dry between paper towels.
5Arrange fennel, onion and orange decoratively on a platter and scatter with fennel fronds. Whisk dressing and drizzle over salad.
