Omelet á la Microwave

José Andrés is a name synonymous with culinary innovation and impactful humanitarianism. This Spanish-born chef founded the nonprofit World Central Kitchen, completely revolutionizing disaster food aid by being on the ground, feeding people immediately when crisis strikes. WCK was there for the nearby and recent Los Angeles fires. Beyond his incredible humanitarian work, Andrés also presides over an empire of more than 30 restaurants, and his list of accolades is truly extensive.

Anyway, I saw a friend of his, a renowned French chef and restaurateur, Nicolas Fanucci, make this surprisingly simple yet perfect dish: the Omelet á la Microwave. Yes, you read that right! This omelet is designed to be made in the microwave, taking only 1 to 2 minutes. The secret to its perfection lies in its simplicity and one unexpected ingredient: a touch of mayonnaise mixed in with the eggs. This addition not only contributes to the omelet's creamy texture but also eliminates the need for any additional salt and pepper. It's a testament to how even the most basic ingredients, prepared thoughtfully, can yield delicious results.

Ingredients

2 eggs

1 tablespoon mayonnaise or to taste, some chefs use Kewpie Mayo

1 teaspoon olive oil

Italian Parsley or chives, finely chopped, to taste

Cheese or filling of your choice

Directions

1Crack the eggs into a flat-ish bowl, add the mayonnaise (though you can adjust the amount based on your preference), oil, parsley and whisk until all the ingredients are evenly mixed.

2Microwave for 1 - 1½ minutes per egg. Take it out of the microwave and add filling of your choice. I used Boursin.

3Fold it like and omelet and enjoy.
