Turn cheesecake into irresistible finger food with these delicious Mini Cheesecakes. Instead of cherry topping, you can also top them with an assortment of jams and preserves, such as strawberry, blackberry and apricot. These are a great dessert for parties and potlucks.

Ingredients

12 ounce package vanilla wafers

1/2 cup butter, melted

2 x 8 ounce packages cream cheese

3/4 cup white sugar

2 eggs

1 teaspoon vanilla extract

21 ounce can cherry pie filling

Directions

1Preheat oven to 350 degrees F. Line mini muffin tins with miniature paper liners.

2Crush the vanilla wafers, mix with melted butter and place 1/2 teaspoon of the crushed vanilla wafers into each paper cup.

3In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy. Fill each miniature muffin liner with this mixture, almost to the top.

4Bake for 15 minutes. Cool. Top with a teaspoonful of cherry pie filling.
