Marinaded New York Strip Steaks

Marinaded New York Strip Steaks are great for the grill or even seared in a skillet. The Marinade helps to tenderize and infuse the steak with flavor. Similar to brining, marinating is an effective way to introduce extra moisture into meat that can get too dry when cooked, as well as making what you marinate more tender.

Ingredients

⅓ cup soy sauce


⅓ cup lemon juice


½ cup olive oil


¼ cup Worcestershire sauce


1 tablespoon garlic
, minced

2 tablespoons Italian seasoning


1 teaspoon pepper


½ teaspoon salt


pinch cayenne pepper


4 New York or ribeye steaks

2 tablespoons butter


fresh parsley, chopped

Directions

1In a small bowl, whisk together soy sauce, lemon juice, olive oil, Worcestershire sauce, minced garlic, Italian seasoning, pepper, salt, and a pinch of red pepper. Add steaks to a resealable zip lock bag or large bowl and pour the marinade on top. Marinate for 2 hours or overnight.

2About 20 minutes before cooking, remove the steaks from the refrigerator and let sit, covered, at room temperature.


To make the steaks on the grill

1Place the steaks directly on the grill on a diagonal. For medium-rare: cook 2 - 3 minutes then rotate 45° F (for criss-cross grill marks) and grill another 2 - 3 minutes. Flip the steaks and repeat on the other side. Grill for more or less time depending on your preferred doneness.

To make the steaks in a skillet

Turn the skillet to high heat. Add the steaks. Cook on each side for 3 minutes or until outside is browned. Reduce heat to medium-high. Cook the steaks to the desired doneness. Mine took about 10 minutes flipping 3 times to get a medium-well.


Temperature chart for New York steak

1Rare: 90-100°F

2Medium Rare: 100-110°F

3Medium: 115 - 125°F

4Medium Well: 125-135°F

5Let it rest for 8 - 10 minutes before you slice it against the grain.
