Lime Pie Cups

We had some friends for dinner last night and I came up with these (no bake) Lime Pie Cups. It's way too hot to be baking! I don't usually create desserts, but I have to say it turned out very well. The sweet graham-cracker crust makes this semi-tart pie a winner.

Ingredients

4 ounces ⅓ less fat cream cheese (neufatchel cheese)

14 ounces sweetened condensed milk

zest from 1 lime

juice from 2 limes

Graham Cracker Crust

¾ cup graham cracker crumbs


3 tablespoons butter, softened


⅛ cup white sugar

Directions

2Mix crumbs, butter, and sugar in a bowl. Press mixture into 4 individual small bowls. Use a spoon to press the crumbs down.

3Using a stand mixer or electric mixer, combine cream cheese and condensed milk until well mixed. Add lime juice and half the lime zest; mix to combine. Pour into the 4 bowls refrigerate for at least 2 hours, up to overnight.

4Garnish with lime wedge or lime zest, if desired.
