Lemonade Salmon

This Lemonade Salmon is fabulous. It's vibrantly flavorful, tangy and easy to prepare. I even used some of the marinade (not the salmon-soaked marinade!) and steamed some broccoli in it. My husband loved it and I will be making this again.

Ingredients

1 cup lemonade

¼ cup soy sauce

2 tablespoons olive oil, plus more for drizzling

2 teaspoons fresh ginger, minced

2 tablespoons brown sugar

2 garlic cloves, minced

1 lemon, juice and zest of, plus 1 lemon, cut into thin rounds


kosher salt & freshly ground black pepper

4 salmon fillets

1 green onion, chopped

Directions

1Preheat the oven to 425° F. Line a baking sheet with parchment paper or foil.

2In a medium bowl, whisk together the lemonade, soy sauce, olive oil, ginger, brown sugar, garlic, lemon zest, ½ teaspoon salt and ¼ teaspoon pepper.

3Put the salmon in a dish and pour the marinade over. Cover and refrigerate 1 hour, flipping halfway through.

4Remove the salmon from the marinade and season with salt and pepper. Discard the remaining liquid.

5Roast the salmon for about 12 minutes then garnish with green onions and lemon slices.
