I was watching Diners, Drive-ins & Dives and saw this recipe for Lemonade Pork Chops. It's a very interesting recipe, but it got RAVE reviews. These pork chops are great: tender, tangy, and delicious.
Prep: 15 mins
Cook: 2 hrs 30 mins
Yields: 6 Servings
Ingredients
3 large lemons, cut in eighths
⅔ cup sugar
2½ cups water
1 cup ketchup
⅓ cup brown sugar
½ cup soy sauce
⅓ cup apple cider vinegar
1 small onion, finely chopped 1 teaspoon oregano
1 teaspoon paprika
1 teaspoon chili powder
1 teaspoon garlic
1 teaspoon cracked black pepper
1 teaspoon ginger
½ teaspoon basil
½ teaspoon thyme
6 pork chops
1 cup flour, for dredging
Directions
1In a food processor, combine the lemons (rind & seeds too -- EVERYTHING), sugar and 1 cup water -- process until liquified.
2Strain the mixture.
3Place the lemon mixture and remaining ingredients, (except the chops & the flour) in a large stainless steel saucepan.
4Simmer for 1 hour on medium, stirring often, being careful not to burn.
5Remove from heat and set aside to cool.
6Preheat oven to 325° F.
7Dredge chops in the seasoned flour.
8Brown chops in olive oil over medium-high heat until golden brown.
9Place chops in roaster and pour lemonade sauce over.
10Cover roaster and place in oven.
11Cook for 1½ hours or until tender.
