Lemon Tarragon Shrimp

This Lemon Tarragon Shrimp can be served as a main course or an appetizer with Lemon Aoli.

Lemon Tarragon Shrimp

Ingredients

2 lbs large shrimp, peeled and deveined with tails on

2 cloves garlic, minced

3 Tbs fresh tarragon, minced

juice of 4 lemons

zest of 2 lemons

2 Tbs chili pepper flakes

1/2 cup olive oil

salt and pepper

1/2 cup white wine

Directions

1Rinse, peel and devein shrimp and set aside.  In a medium bowl, add remaining ingredients and taste before adding the shrimp to make sure it's spicy enough or seasoned enough to your liking.   Add the shrimp and toss to coat.   Let marinade, covered, for at least 30 minutes in the refrigerator.

2Preheat the broiler. Arrange the marinated shrimp in a skillet. Cover the shrimp with any remaining marinade.

3Broil under high heat until the shrimp are pink and the topping is well browned, approximately 5 minutes. Serve immediately.
