I went to happy hour at McCormick & Schmick’s, which is a seafood restaurant. I ordered the Crispy Shrimp Croutons with Lemon Tabasco Aioli. It was particularly delicious. Aioli is a Provençal traditional sauce made of garlic, olive oil, lemon juice, and usually egg yolks. It's basically garlicy mayo. There are many variations. It is usually served at room temperature. The name aioli comes from Provençal alh 'garlic' and òli 'oil'.

1Measure the mayonnaise into a small stainless-steel bowl; add the zest from lemons and the lemon juice into the mayonnaise.

2Mince the garlic, add the salt to the garlic and with the side of a wide knife blade, mash the garlic and salt into a paste. Add the paste to the citrus mayonnaise.

3Season with white pepper and Tabasco sauce, stirring the mixture until all the ingredients are thoroughly incorporated. Cover and allow to rest at least one hour.
