These Lemon Marinated Tortellini, Basil & Tomato Skewers are very easy to make and perfect for a summer party.

Yields: Makes 20 skewers
Ingredients
20 cheese filled tortellini
20 cherry tomatoes
20 large basil leaves
Marinade
1 teaspoon grated lemon zest
2 Tablespoons lemon juice
4 Tablespoons olive oil
salt, black pepper
Directions
1Cook tortellini in salted boiling water until tender, 4 minutes, or according to instructions on the package. Drain and rinse with cold water.
2Spread out in a single layer on a clean tea towel to dry.
Marinade
1Whisk lemon and oil until thick and combined.
2Toss the cooled pasta and marinade together in a nonmetallic bowl to coat each piece well. Add salt and pepper to taste.Cover and marinate at room temperature for 30
3minutes.
4Thread 1 tortellini, 1 tomato and 1 basil leaf onto each skewer.
5Serve at room temperature.

7Marinate tortellini up to 1 day in advance. Cover and refrigerate. Assemble skewers up to 4 hours in advance. Return to room temperature before serving.
