Lemon Chicken in a Slow Cooker

This Lemon Chicken in a Slow Cooker is perfectly juicy and tender, easy to make, and full of  fresh lemony flavor. It's a fast and family-friendly weeknight meal.

  • Yields: 4 - 6 Servings

Ingredients

¼ cup all-purpose flour

3 - 4 large boneless, skinless chicken breasts, cut into thirds

¼ cup butter

1 packet Italian dressing/seasoning mix or make it from scratch (see recipe below)

½ cup fresh lemon juice

½ cup chicken broth

salt and pepper

Italian Dressing / Seasoning

1 tablespoon garlic powder

1 tablespoon onion powder

1 tablespoon white sugar

2 tablespoons dried oregano

1 teaspoon ground black pepper

¼ teaspoon dried thyme

1 teaspoon dried basil

1 tablespoon dried parsley

¼ teaspoon celery salt

2 tablespoons salt

Directions

1Lightly coat the chicken in the flour. Set aside.

2Plug in the slow cooker and turn setting to low heat.

3Heat 2 Tablespoons of butter in a large non-stick skillet, over medium-high heat. When butter is melted, add half of the flour-coated chicken pieces. Season with salt and pepper. Cook chicken for 3 - 4 minutes or until golden brown on each side.

4Remove chicken from skillet and place in the slow cooker.

5Add the 2 remaining tablespoons of butter in skillet, and cook the remaining flour-coated chicken pieces on each side for 3-4 minutes or until golden brown. Remove chicken from skillet and place in slow cooker.

6Sprinkle the Italian dressing/seasoning mix evenly over the chicken. Pour the lemon juice and chicken broth over the tops. Cover with lid, and cook on low heat for 3 hours.

7Either serve chicken pieces whole or shredded, with the lemon sauce/broth.

Italian Dressing / Seasoning

1In a small bowl, mix together the garlic powder, onion powder, sugar, oregano, pepper, thyme, basil, parsley, celery salt and regular salt. Store in a tightly sealed container.
