Kielbasa Cabbage Stew

This Kielbasa Cabbage Stew is simple, savory, and satisfying. It’s the perfect easy-to-make meal to take the chill off a cold day. Since it comes together in just one pot, you’ll spend less time cleaning up and more time enjoying a bowl of pure comfort. Serve it with a thick slice of crusty bread.

Ingredients

½ pound kielbasa or Polish sausage, sliced

1 pound Yukon gold potatoes, peeled and cubed

2 cups cabbage, shredded

1 large onion, chopped

14½ ounce can reduced-sodium chicken broth

¾ cup water, divided

2 teaspoons sugar

1 teaspoon caraway seeds

¼ teaspoon pepper

16-ounce can cannellini beans, rinsed and drained

3 tablespoons cider vinegar

2 tablespoons flour

Directions

1In a large saucepan or nonstick skillet, brown sausage over medium heat. Add the potatoes, cabbage, onion, broth, ½ cup water, sugar, caraway seeds, and pepper. Bring to a boil. Reduce heat; cover and simmer for 15-18 minutes or until potatoes are tender, stirring occasionally.

2Add beans and cider vinegar; cover and simmer 5-10 minutes longer. Combine flour and remaining water until smooth; stir into stew. Bring to a boil; cook and stir for 2 minutes or until thickened.

Yum! We had butcher shop sausage to cook up, so i substituted. No potatoes and no caraway seed, so i used celery seeds. Not quite the same recipe but delicious inspiration! Thank you!!
